The Prinnie-Mack Coffee Company, LLC, first opened it's doors on April 6th, 2006. The owners, Stephen and Kathy Pollitt, frequented the coffee shop once called Gourmet Grounds, located across the street from the hospital where they both work. They were devastated when gourmet grounds closed, only a few months after opening. Fueled by a fierce caffeine craving and disregarding the possibility of future impoverishment, they bought the building and re-opened the doors of the ill-fated coffee shop.
They decided to name the business after their two dogs, Prinnie and Mack. Princess, a dalmatian-pointer- mutt-Louisiana -bug-chasing dog, inspired them with her enourmous supply of energy and constant vigilance. Mactavish is a prim and proper Scottish Terrier who, uncommon to the breed, seems to love every living thing and has never met a stranger he didn't like. "We figured, if you could combine the best qualities of those two, you would have an unbeatable combination!" So that is the basic foundation of their company policy: Work hard, be friendly and loyal to your customers and serve the highest quality products at a fair price.
